ワイナリーで栽培したセイベル種、ツヴァイゲルトレーベ種など2017年産ブドウをやや強めのミディアムボディに醸造し、定山渓にある豊平峡ダムの工事用トンネルで長期間（5年間）熟成させました。気温は10度　湿度95％の真っ暗闇で振動はほぼゼロ、熟成環境としては抜群のロケーションです。この年のワインは色合いも濃く、ボディも強く、まだまだ先があると思われる赤ワインです。ロマンを感じさせる一品です。
